The Secret to Spain's Social Life? Tapas

Tapas, a cherished Spanish tradition, have origins that some trace to King Alfonso X in the 13th century, while others attribute their rise to 19th-century Andalusia. More than just food, they embody history, flavor, and social connection. From Vigo's fresh oysters and Pamplona's piquillo peppers to Toledo's hearty bomba and Jaén’s migas serranas, each region adds its own flair. In the Canary Islands, tapas—known as enyesque—offer a blend of tradition and innovation, with delights like papas arrugadas with mojo picón. This culinary tradition, celebrated at Madrid Fusion and World Tapas Day (June 16, 2025), transforms tapas into a creative culinary spectacle that showcases heritage and the joy of sharing. In Spain, one tapa is never enough!
